- Blanch carrots and ginger chunks in hot water, then sautee in separate pans to prevent overpowering the natural flavor of the carrots with the ginger.
- Add 1-2 tablespoons of honey and the juice of half of a lemon to carrots to create a glaze.
- Add ginger and toss to coat in glaze.
- Remove from heat, plate and serve.
