When developing specials for holidays like St. Patrick's Day, you don't always have to go straight for the traditional dishes. Chef Marcus came up with this "Inspired by" Grilled Cheese Sandwich with fresh roasted Corned Beef and Sauteed Cabbage. It nods to the Classic Ruben Sandwich, but offers a milder flavor profile for guests who are not enthused by the high calorie sauerkraut and thousand island dressing.

- Prepare your Corned Brisket ahead of time by cooking in the oven according to package instructions. Keep warm till ready to serve.
- Dice a white onion and slice the cabbage. Melt ¼ cup of butter in a skillet over medium high heat and add in the cabbage and onion. Season with salt and pepper, and sauté until the cabbage and onion are tender, about 8-10 minutes.
- Toast your bread on the flattop on both sides. Be sure to melt cheese over the bread.
- Stack all ingredients together into a sandwich and serve.
