- Make your pancake mix according to package instructions. Add in your desired amount of shredded cheddar cheese and bacon bits.
- Fry your chicken breast until a thermometer inserted into the thickest portion reads 165 degrees.
- Meanwhile, pour your batter into the waffle iron and cook until it is a nice, crispy golden brown.
- Once both are ready, plate and serve piping hot!
