That's how Chef Marcus came up with these delicious Chicken & Waffle skewers! With a thick crispy waffle batter coating and a strawberry orange dipping sauce, this dish makes the perfect Southern and Asian cuisine inspired mashup that your guests will love as an appetizer or at the next food truck festival.

Items Needed

Preparation

  • ​Cut chicken breasts into strips and spear onto a skewer.
  • Dredge the chicken in dry waffle batter, then place on plate. Mix together your waffle batter, adding an extra egg to the mix for a thicker consistency, then dredge the chicken skewer again.
  • Knock off any excess batter and fry in a 350⁰ fryer until golden brown.
PRO TIP: Serve with a house-made strawberry orange honey dipping sauce for an Asian Orange Chicken twist on this Southern Fusion dish. 

ORANGE CHICKEN SAUCE INGREDIENTS & PREPARATION
​1 qt Strawberries
¼ cup Orange Liqueur
3 to 4 tblpoons sugar
2 to 3 tblspoon orange juice
  • In a food processor, puree strawberries, orange liqueur, sugar, and orange juice. Taste, adding more sugar, if desired.  Put in a pot and reduce to desired thickness.
